About Brighton: Brighton has worked as an ACE personal and group fitness trainer in San Francisco. Using the environment as the gym, she led group classes on the sand at Baker Beach and the batteries on the bluff by the Golden Gate Bridge. Wanting to help her clients fuel their bodies healthfully, she got her certification in holistic nutrition, with an emphasis on plant-based nutrition for athletes, at Bauman College in Berkeley and added nutrition coaching for her clients. In 2015, she opened Nourish Cafe, a healthy plant-based cafe in San Francisco, and operated two locations for 10 years.
